Malvani Rice Vade| Tandalache Vade | Rice Flour Flatbread

Malvani Rice Vade is a fried flatbread made of rice flour. It is a specialty in the Konkan region of Maharashtra.

Rice Vade is served with either chicken or mutton curry. The recipe itself is not complicated. It has about 3 ingredients. The prep for it is not so difficult either.

Rice vade is also known as Tandalache Vade in Marathi. In Hindi language, people call it rice poori.

The traditional method of making Tandalache vade

  •  Takes time.
  •  The process requires years of practice.

My mom-in-law is an expert in making them and can churn out rice vade with her eyes closed. I, however, make them rarely and have a difficult time forming them by hand.

The above process has saved me a lot of time forming the rice vade. In the meantime, check out the recipe below:

Malvani Rice Vade | Thandalache Vade | Fried Rice Flatbread

Ingredients:

2 cups Rice Flour
1/4 cup of Whole Wheat Flour
1/2 tsp turmeric
salt as per taste
1/1/2 cups of water

Preparations:

  • In a mixing bowl add rice flour, whole wheat flour, turmeric and salt. Mix them all well.
  • Next, add water in a steady stream and mix and knead it into a soft dough.
  • Set this dough aside to rest for half an hour.
  • Divide the dough into 1 3/4 ” ball.
  • Place a ball of dough over a piece of plastic wrap or wet cloth.  With wet fingers press down the dough outwards forming a circle until it is about 3″ to 4″ inches in diameter.
  • In a kadhai or frying pan heat oil.
  • Carefully and gently removed the pressed rice vade and place it in the hot oil.
  • Fry it for a couple of seconds on both sides until done.
  • Remove it from oil and drain it on paper towels.
  • Place it in a covered bread basket or container until it is ready to be served.
  • Serve it warm with either Chicken Curry or Mutton Curry.

Useful Suggestions:

You can make the dough in a Kitchen Aid Mixer too. In fact, it turns out well and is quicker to form the dough.
