Sweet Lemon Pickle Maharashtrain Recipe

Sweet Lemon Pickle is the easiest lemon pickle to make. It is oil free and does not involve any cooking. You can make this recipe even if you have never cooked in your life. It does require a couple of days for lemons to preserve and mature with all the added ingredients.  Follow the instructions  and you will not go wrong.

This sweet lemon pickle is a popular Maharashtrain recipe. In Marathi it is known as Limbache Lonche. I have been making it for years. My girls love this pickle because it is sweet, tangy and sour with a hint of heat (spicy). They love to pair it with some of my bland rice dishes.

Sweet Lemon Pickle – Maharashtrain Recipe

Ingredients

6 large lemons (about 2 cups – finely chopped)
3/4 cup sugar
1 tsp salt
1/4 tsp fenugreek (roasted and powdered)
2 tsp Kashmiri chili powder
1/2 tsp turmeric powder

Preparation

  • In a mixing bowl add chopped lemons, salt and turmeric powder. Mix properly and pack it into a clean, dry, glass jar.
  • Stir this pickle mixture once every day for 15 days.
  • Add fenugreek powder, chili powder and sugar to the pickle mixture and mix properly.
  • Set it aside for another 2-3 days.
  • Serve it on the side with paratha or rice dishes.

Useful Suggestions:

  • If you find the lemon pickle mixture bitter after mixing all the spices, feel free to add more sugar.
  • If you want it to be more spicy, again feel free to add a tsp of chili powder.
  • I like to use Kashmiri chili powder for this recipe because of its vibrant red color and low level of heat. You can use any chili powder you want.
  • You can keep this pickle outside (for a month) or in the refrigerator for couple of more months.
