Watermelon Mocktail

I saw the recipe for watermelon mocktail on “Sandra’s Money Saving Meals” on Food Network. I am usually not a fan of her show as her recipes feature a lot of processed and ready made food. I was forced however, by “S” to watch this particular recipe and then forced again to make it. Even though “S” is only six years old I can already see her taking great interest in cooking. When she is not watching her kiddie programs, she is watching Barefoot Contessa. Anyway, last week I made the watermelon mocktail and I am so glad “S” made me do it. In fact she even helped me with separating the pulp portion of the recipe and worked really hard at it. This mocktail is absolutely refreshing and perfect for the hot summer days that we have been having. Enjoy!

 

Watermelon Mocktail

 

Ingredients:

4 cups watermelon
1 tbsp sugar syrup (equal parts sugar and water)
2 tbsp lemon juice
sparkling water (soda)

Preparations:

  • Blend watermelon in a blender along with sugar syrup and lemon juice.
  • Pass the blended watermelon juice through a strainer. Since the pulp is very thick force it through with a spatula.
  • Pour the juice into a pitcher filled with ice to chill it.
  • Serve it either in a martini or cocktail glass.
  • Top of with a dash of sparkling water in each serving.

Useful Suggestions:

  • To make the watermelon mocktail into a cocktail, add an ounce of vodka in each serving and stir it.
  • If you don’t have sugar syrup on hand, substitute it with regular sugar.
  • You can use fresh or frozen watermelon.
