Dry Garlic Chutney | Lahsun Chutney

Dry Garlic Chutney is also known as Lahsun Chutney in Hindi. It is a condiment that my husband and girls cannot live without. I have more requests for this chutney than any other condiments. In fact, sometimes my little one ‘S’ prefers to pair garlic chutney over ketchup with fries, hash browns, and potato wedges.

This particular recipe is named dry garlic chutney because unlike other chutneys, there is no addition of water or any other liquid while blending/grinding it. Since it is dry this recipe is also easy to store and can be used safely for a month.

Recipe for Dry Garlic Chutney | Lahsun Chutney

Ingredients:

1 cup dry shredded coconut
12 cloves of garlic
12 red whole dry byadagi chili
1 tsp red Kashmiri Chili powder
5 small pieces of dry tamarind
salt to taste

Preparation (see pics below):

  • Roast coconut in a pan until lightly brown.
  • Next roast garlic (with skin), chilies and tamarind separately for a couple of seconds each.
  • Once cooled, peel off the garlic skins.
  • In a blender combine garlic, chilies, and tamarind and blend for few seconds.
  • Add coconut and salt and blend/grind some more until ready.
  • Store it in an airtight container.

The recipe itself is very easy, but it important to get the proportion of ingredients right. If you add to many cloves of garlic, you will end up with a strong, bitter and tongue numbing taste. I used Byadagi chilies for heat, because this type of chili is mildly spicy. If you prefer more heat, you can use other varieties of chilies as long as they are dry and red. The great thing about dry garlic chutney is you can safely store it outside on counter top for up to 2 weeks and in the refrigerator for more than a month.

 

Uses of Dry Garlic Chutney| Luhsun Chutney

  • Sprinkle it on your favorite Mumbai Vada Pav.
  • Pair it up with other vegetable fritters instead of ketchup.
  • Serve it on the side with batata vada (patoto vada).
  • Sprinkle some on your plain butter sandwich to enhance and spice it up a notch.
  • Serve it on top of rice ganji (rice soup).
