Jalapeno with Chicken Stuffing

Jalapeno with Chicken Stuffing is one of those recipes that I would categorize as “let me try and see if it works”. Guess What? It works! There is no history or memories behind this recipe. I came up with it because I was inspired by all the preparations for tomorrow’s thanksgiving dinner. Luckily, I had all the ingredients in my pantry. Believe it or not, I already had jalapenos which I was planning to use for my turkey.

The great thing about this recipe is that it’s really quick, easy and the prep work is minimal. I feel the crisp texture of the jalapenos, with softness of the chicken stuffing and melted cheese on top, makes it perfect as an appetizer. Next time I am having a party, I will be serving these. Enjoy and Happy Thanksgiving Y’all!

 

Jalapeno with Chicken Stuffing

 

Ingredients:

6 jalapenos
2 cups Stove Top or any other boxed chicken stuffing
1 1/2 cups Taco cheese blend

Preparations:

  • Cut open the jalapenos lengthwise. Remove all the seeds from the center and set aside.
  • Prepare the stuffing as per the instructions on the box. Allow it to cool.
  • Take one half of the jalapeno and stuff them with a spoonful of stuffing. Place them on a baking tray.
  • Repeat this for all the other jalapenos.
  • Pre-heat oven to 350 degrees.
  • Sprinkles cheese on each of the stuffed jalapenos.
  • Bake it for around 5-6 minutes or until the cheese has melted.

Additional Instructions:

  • If you are adventures like me, you can leave some seeds in. It will add a bit of heat. Make sure however to not leave more than 3- 4 seeds.
  • Any kinds of stuffing works with the recipe. You can substitute the chicken stuffing with vegetarian one.
  • I personally would experiment with other kinds of cheese as well.

    I could just imagine the flavor combinations in this dish due to the jalapeños. My husband likes recipes that pack a flavor punch so he would love this one if I made it here at home.

    This looks very tempting but I don’t eat spicy or hot. I think they would go great when entertaining for a football game or holiday party.
